Low-Fat English Muffin Pizzas

I just kind of made these up as I went, but they have turned out pretty good both of the times I have made them! My picky husband loves them, and really likes it when I get a big green pepper and there's some left over for him to eat raw!

Makes 2-4 servings, depending on who's eating them. :)

4 Pepperidge Farm whole-wheat English muffins (or whatever brand of whole-wheat English muffins you can find)
1/3 c. (or so) organic pizza sauce
24 slices Hormel turkey pepperoni
1 green pepper, cut into chunks
2 c. (or so) fat-free shredded Mozzarella and/or Cheddar cheeses
salt-free Italian herb blend (might be called pizza seasoning or spaghetti sauce seasoning)

Preheat your oven broiler. Toast muffins in a standard toaster until crispy. On a cookie sheet, spread pizza sauce evenly on muffin halves (as much or little as you like). Top each muffin half with 3 slices turkey pepperoni, 5 or 6 chunks of green pepper, cheese, and sprinkle with Italian seasoning. Broil on the second-from-top rack, watching carefully, until cheese melts and is beginning to brown. I have an electric range, so I just leave the door cracked open about 3" and watch them from there.

Approx. 2-3 WW Points per muffin half
