3 cups light coconut milk
3/4 cup fat-free milk
1/2 cup long grain white rice
1/4 cup packed light brown sugar
1 tsp vanilla extract
1/2 tsp ground cinnamon
Combine coconut milk, milk, rice, sugar in a medium saucepan. Bring to a simmer, cover, and cook over low heat until rice is tender and mixture is creamy, about one hour. Remove from heat and stir in vanilla and cinnamon. Serve warm or chilled.
You can also add the vanilla and cinnamon at the beginning to make it taste more like a traditional rice pudding.
